Breakfast & Hunt Country Brunch

Breakfast has always been one of my favorite meals and one that is certainly not limited any longer to the morning hours.  Here at Gentry’s Catering, we have provided continental and hot breakfasts for our customers for decades.  The following selections are available for your guests and the number of them is not an issue.  We regularly provide breakfast and brunch menus for groups in excess of 1,000 people.

 

            Also, these meals are available at any location.  With the mobile commercial kitchen and other mobile equipment at our disposal, your menu can be presented buffet style at your business, your home, your farm or anywhere else the kitchen will go. 

 

            You will note that the menus are broken down into continental, hot buffet, full Hunt Country brunch selections, etc.  These sections are not meant to be exclusive.  You are certainly free to mix and match any of the selections from all of these sections to create a buffet menu that suits your needs.   Please review these selections and contact us for a quote.  If there are other items that you desire on your brunch buffet but do not see listed here, please don’t hesitate to contact me.  This is not an all-inclusive list.

  • Scrambled eggs (note: “eggs to order” station available – cost depends on number of guests and staff required)

  • Cheese strata (a wonderful baked casserole with eggs, bread –your choice- cheese, butter and spices.) This is one of our most popular breakfast selections.
  • Bacon
  • Sausage (link and/or patties)
  • Baked ham
  • Country ham
  • Scrapple
  • Fried salt pork
  • Chicken tenders
  • Beef tenderloin medallions
  • Beef, pork or chicken fried steak
  • Pancakes (regular or silver dollar – all pancakes available with your choice of fruit topping)
  • Blueberry pancakes (Regular and sugar free syrup or specialty syrup available on request.)
  • French toast
  • Waffles (for waffles station)
  • Crepes (All fruit fillings available)
  • Fresh baked, hot buttermilk biscuits (available with cream gravy, sausage gravy, red-eye gravy, butter and assorted jellies and jams)
  • Homemade fresh baked yeast rolls
  • Hash brown potatoes
  • Miniature “baby” baked potatoes
  • Potato pancakes
  • French fries
  • Baked potato breakfast casserole (with onions, peppers, and cheese)
  • Sautéed peppers and onions

 

Hunt Country Brunch Selections:

 

  • Country ham biscuits
  • Fried chicken
  • Brunswick stew (All of our soups and stews are homemade and are one of our specialties)
  • New England clam chowder
  • Crab soup
  • Tomato basil soup with cannelloni beans
  • Cold boiled shrimp with cocktail sauce
  • Sautéed or fried sea scallops
  • Ed’s best back-fin crab cakes
  • Seafood Newburg (usually made with shrimp and scallops, but works well with any firm, white fish – rockfish or mahi-mahi, for example)
  • Poached salmon
  • Smoked salmon
  • ________ salmon with cream cheese, diced onions, capers, etc.
  • Whole roast beef tenderloin
  • Whole roast pecan encrusted pork tenderloin and a Grand Mariner marmalade sauce)
  • Boneless breast of chicken stuffed with spinach, onion and ricotta cheese)
  • Chicken cordon bleu
  • Bacon wrapped quail on toast

Omelet Stations:

 

            This item can be added to any breakfast or brunch menu. The cost depends on the number of guests to be served, the staff required and the ingredients to be offered.

 

            Available omelet fillings include but are not limited to the following:

  • Cheese (cheddar, mozzarella, pepper jack)
  • Onions
  • Peppers
  • Mushrooms
  • Ham (cubed)
  • Sausage (crumbled) (regular, hot, or chorizo)
  • Tomatoes
  • Salsa
  • Shrimp
  • Crab

 

Waffle Stations:

 

            These also can be added to any breakfast or brunch event. These light and crunchy waffles can be served with any of the following:

 

  • Regular or sugar free syrup
  • Specialty syrups (maple – fruits)
  • Powdered sugar
  • Brown sugar
  • Cinnamon
  • Bananas
  • Any other fruit in season

 

Eggs-to-order Station:

 

            This item too is available with any breakfast or brunch menu. We use a large, portable griddle that can be set up anywhere and the chef(s) will prepare eggs to order for your guests.

 

Carving Station:

 

            Available are roast beef, turkey, pork including but not limited to the following:

 

  • Whole beef tenderloin (certified black angus available)
  • Whole boneless prime rib
  • Whole pork tenderloin
  • Whole pork loin
  • Baked ham
  • Whole roast turkey breast
  • Whole roast leg of lamb with mint jelly

 

Salad and Vegetable Side Items:

 

            All of our extensive listing of salads and vegetable side items are available for brunch. Please review those selections on this website.  Mashed potato and baked potato bars are also available.

 

Desserts:

 

            We offer a full selection of excellent cakes, pies, dessert bars, cookies, cheesecakes (my cheesecakes are what started this business).

 

            We also offer fresh baked hot cobbler with any fruit filling your wish. These can be served with ice cream.

           

            We offer an ice cream bar for your guests to choose their own topping.

 

            Strawberries (chocolate covered or not) or any other fruit in season are also available.
